Sodexo is looking for an Executive Chef for Allentown, PA
Coordinated Heath is two micro Hospitals. Each has 20 beds,however, one of the two also has a 12 bed nursing home. Coordinated Health is acute care, mainly surgical cases and most patients are on a regular diet. There are two retail outlets that are very small. Employees can come to both kitchens to order and pick up food. 2 additional micro hospitals are currently being constructed. Front-line staff is employed by Sodexo.
As the Executive Chef 1 you will be managing the BOH staff, training and developing a culinary team with sanitation and food safety. You will also oversee menu planing, and the catering needs of the account. This role does not require for you to be hands on daily in the kitchen, but you will need to be able to jump in and support.

The ideal candidate:
Supervises the day to day operations,primarily food production for patient meals,cafe and catering.
Purchases all raw materials for the department
Responsible for inventory management, product storage and distribution
Accountable for the safe food handling of all product in the kitchen
Utilizes Sodexo's Food Management Process for forecasting, portion controls, recipe compliance and cost containment
Participates in the planning, preparation, presentation and execution of catering events
Will also oversee patient meal assembly
Conducts Quality Assurance audits- Tray assessments, tray accuracy audits, pre-meal meetings and taste and temp panels
Conducts daily Culinary Planning Meetings with production staff
Conducts safety audits
Conducts safety and skills in service for staff

Provides culinary leadership within a small sized unit including menu planning, program execution and staff management & training. Works directly with internal and external clients managing the catering process from beginning through execution

Qualifications & Requirements
Basic Education Requirement - Associate's Degree
Basic Management Experience - 2 years
Basic Functional Experience – 1 year work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
